 Crockpot Creamy Potato and Hamburger Soup

Ingredients:

  • 1 pound ground beef
  • 4 cups diced potatoes (about 4 medium potatoes)
  • 1 cup diced carrots (about 2 medium carrots)
  • 1 cup diced celery (about 2-3 stalks)
  • 1 small onion, diced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 cup shredded cheddar cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  • Brown the Ground Beef: In a skillet over medium-high heat, cook the ground beef until fully browned. Drain excess fat and set aside.

  • Prepare Vegetables: Place the diced potatoes, carrots, celery, and onion into the crockpot.

  • Add Beef and Seasonings: Add the cooked ground beef to the crockpot. Pour in the beef broth. Season with dried thyme, parsley, garlic powder, salt, and pepper.

  • Cooking in Crockpot: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

  • Make Cream Mixture: About 30 minutes before serving, whisk together the heavy cream and flour until smooth. Stir this mixture into the crockpot soup.

  • Finish and Serve: Continue cooking for another 30 minutes to allow the soup to thicken. Adjust seasoning if needed. Serve hot, topped with shredded cheddar cheese and chopped fresh parsley if desired.
