Garlic Parmesan Chicken Meatloaves

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
  2. Mix together ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, dried basil, dried oregano, salt, and pepper in a large bowl until well combined.
  3. Shape the mixture into individual meatloaves and place them into the prepared muffin tin.
  4. Top each meatloaf with marinara sauce and shredded mozzarella cheese.
  5. Bake in the preheated oven for about 25-30 minutes, or until the meatloaves are cooked through and reach an internal temperature of 165°F (75°C).
  6. Let them cool slightly before serving. Optionally, garnish with additional grated Parmesan cheese and chopped fresh basil before serving.
