Garlic Parmesan Chicken Skewers
Ingredients:
- 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized cubes
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
- Wooden or metal skewers
Instructions:
1.Prepare the Marinade:
- Combine Ingredients: In a large bowl, whisk together the olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
2. Marinate the Chicken:
- Mix: Add the chicken cubes to the bowl and toss until they are well-coated with the marinade.
- Chill: Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to develop.
3. Prepare the Skewers:
- Soak Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Skewer the Chicken: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
4. Cook the Skewers:
Option 1: Grilling
- Preheat Grill: Preheat your grill to medium-high heat.
- Grill: Place the chicken skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
Option 2: Baking
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Bake: Arrange the skewers on a baking sheet lined with parchment paper or foil. Bake for 15-20 minutes, turning once halfway through, until the chicken is fully cooked.
5. Serve:
- Garnish: Sprinkle the skewers with chopped fresh parsley.
- Lemon: Serve with lemon wedges on the side for a fresh burst of flavor.
Tips:
- Extra Flavor: For added flavor, brush the skewers with a little melted butter during the last few minutes of cooking.
- Sides: Serve with a side of grilled vegetables, a fresh salad, or garlic bread.
