 Ribeye Steak with Caramelized Onions and Mashed Potatoes

Ingredients:

  • 2 Ribeye steaks (about 1 inch thick)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon brown sugar (optional, for caramelizing onions)
  • 4-6 potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions:

For the Mashed Potatoes:

  1. In a large pot, add the potatoes and cover with water. Bring to a boil over medium-high heat. Cook until potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper to taste. Mash the potatoes until smooth and creamy. Cover and set aside.

For the Ribeye Steak:

  1. Season the steaks generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat until hot but not smoking. Add the steaks and cook to your desired doneness, about 4-5 minutes per side for medium-rare, depending on thickness. Remove the steaks from the skillet and let them rest for a few minutes.
  3. In the same skillet, reduce the heat to medium. Add 2 tablespoons of butter and sliced onions. Cook the onions, stirring occasionally, until they are soft and golden brown, about 15-20 minutes. If using brown sugar, sprinkle it over the onions to aid in caramelization.
  4. Serve the ribeye steaks topped with caramelized onions alongside the creamy mashed potatoes. Garnish with chopped parsley if desired.
