Spinach and Feta Chicken Rolls
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- ½ cup feta cheese, crumbled
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Toothpicks or kitchen twine
Instructions:
Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to about ¼ inch thickness.
Make the Filling:
- In a small bowl, mix together the chopped spinach, feta cheese, and minced garlic. Season with a pinch of salt and pepper.
Stuff the Chicken:
- Place a portion of the spinach and feta mixture onto each chicken breast, spreading it evenly.
- Carefully roll up each chicken breast, starting from the short end, and secure with toothpicks or kitchen twine.
Season the Rolls:
- Brush the chicken rolls with olive oil. Sprinkle the outside with salt, pepper, dried oregano, and paprika.
Cook the Chicken:
- Heat a large ovenproof skillet over medium-high heat. Add a little olive oil, then place the chicken rolls in the skillet, seam-side down. Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
Serve:
- Remove the toothpicks or twine before serving. You can slice the rolls into medallions for a beautiful presentation. Serve with your favorite side dish, like roasted vegetables or a fresh salad.
