garlic parmesan chicken meatloaves
Ingredients:
- 1 lb ground chicken
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (panko or regular)
- 1 egg, lightly beaten
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup milk
- ½ cup shredded mozzarella or provolone cheese (optional for topping)
For the Garlic Parmesan Topping:
- 2 tbsp butter, melted
- 2 tbsp grated Parmesan cheese
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix the Meatloaf Ingredients: In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, garlic, onion, parsley, Italian seasoning, salt, pepper, and milk. Mix everything together until well combined.
- Shape the Meatloaves: Divide the mixture into 4-6 portions, depending on how large you want the meatloaves. Shape them into mini loaves and place them on the prepared baking sheet.
- Prepare the Garlic Parmesan Topping: In a small bowl, mix the melted butter, Parmesan cheese, garlic, and parsley. Brush this mixture generously over the tops of the mini meatloaves.
- Bake: Bake for 25-30 minutes or until the meatloaves are cooked through (internal temperature should reach 165°F or 74°C).
- Optional Cheese Topping: If you want a cheesy topping, sprinkle shredded mozzarella or provolone over the meatloaves during the last 5 minutes of baking.
- Serve: Let the meatloaves rest for a couple of minutes before serving. Garnish with extra parsley if desired.
